The food you eat during the day may influence more than how hungry you feel when you go to bed.
It may change the structure of your sleep that very night.
A new study analysing 4,793 nights of real-world dietary and sleep data found that days containing more fibre and a greater variety of plant foods were associated with measurable changes in sleep physiology, including more deep and REM sleep and a lower heart rate during the night.
The findings, published in Nature Health, are particularly interesting because the researchers did not simply compare people with generally healthy and unhealthy diets.
They examined how changes in what the same people ate from one day to another related to what happened while they slept hours later.
The results suggest that some effects of diet may appear much faster than we usually think.
Researchers followed food during the day and sleep at night
The study used data from the Human Phenotype Project, a large research programme collecting detailed information on people’s health and daily behaviour.
Participants recorded what they ate in real time rather than trying to reconstruct their diets weeks or months later.
Their sleep was then measured using wearable devices capable of distinguishing different stages of sleep.
Across the analysis, researchers had 4,793 person-nights in which dietary information could be linked with objective sleep measurements from the same night.
They also accounted for the previous day’s diet and sleep, allowing them to focus more closely on whether day-to-day dietary changes were followed by changes that night.
This is a substantial improvement over simply asking someone whether they generally eat well and whether they generally sleep well.
More fibre was linked to more restorative sleep
One of the clearest patterns involved fibre.
Higher fibre density during the day was associated with an increase of approximately 0.59 percentage points in deep sleep and 0.76 percentage points in REM sleep.
At the same time, light sleep decreased by around 1.35 percentage points.
The participants’ average heart rate while sleeping was also approximately 1.14 beats per minute lower following higher-fibre days.
Those numbers may look small, but sleep architecture is divided across the entire night. Shifting even a modest proportion of sleep from lighter stages towards deep or REM sleep can represent a measurable physiological change.
Deep sleep is closely associated with physical restoration, while REM sleep plays important roles in processes including memory and emotional regulation.
The study does not show that eating one high-fibre meal will suddenly transform a poor sleeper into a good one.
It does suggest that the composition of an ordinary day’s food may be reflected in the body’s behaviour only hours later.
Eating different plants also appeared to matter
The researchers did not look only at fibre quantity.
They also measured plant diversity, defined as the number of different plant-based foods eaten during the day.
Greater plant diversity and higher consumption of whole plant foods were associated with a lower heart rate during sleep.
A separate measure called the Dietary Phytochemical Index produced a similar pattern.
Phytochemicals are naturally occurring compounds found in plant foods such as vegetables, fruit, legumes, grains, herbs and nuts.
Days with a higher phytochemical index were associated with approximately 0.62 percentage points more REM sleep, one percentage point less light sleep and a nocturnal heart rate almost one beat per minute lower.
This is important because nutrition advice often concentrates heavily on individual nutrients.
The new findings instead suggest that the broader structure of the diet, including how much of it comes from intact plant foods, may matter for sleep physiology.
A bigger evening meal produced a strange trade-off
Meal timing produced one of the study’s more surprising findings.
Participants who consumed a greater proportion of their daily energy during the six hours before bedtime slept around 7.7 minutes longer.
That sounds positive.
But their average sleeping heart rate was also approximately 0.73 beats per minute higher.
In other words, a heavier evening intake was associated with slightly more sleep but also with signs that the body was working harder during that sleep.
Digestion does not stop when the lights go out.
A substantial meal can increase metabolic activity and influence the autonomic nervous system while the body is supposed to be settling into its overnight state.
This is why simply measuring how many hours someone spends asleep does not tell the whole story.
Two people can both sleep for eight hours while experiencing very different sleep architecture and nighttime physiology.
Protein, carbohydrates and fat were not the main story
Another finding challenges the temptation to search for one perfect sleep nutrient.
Short-term changes in the proportion of calories coming from carbohydrates, protein and fat did not show robust associations with sleep after the researchers corrected for multiple statistical comparisons.
The same was true for many individual micronutrients.
That does not mean macronutrients and vitamins are irrelevant to health.
It means the strongest same-night signals in this particular study appeared around dietary quality, fibre, plant foods and meal timing rather than whether someone’s dinner contained a particular ratio of protein to carbohydrates.
For consumers surrounded by supplements and foods marketed specifically for sleep, that is a useful distinction.
Why your dinner and your sleep are connected at all
Scientists already know that diet and sleep influence one another.
Poor sleep can change appetite, food choice and hormones involved in hunger.
The reverse relationship is increasingly receiving attention.
Food influences blood glucose, digestion, body temperature, the gut microbiome and the autonomic nervous system. All of these can interact with processes involved in sleep.
Fibre and plant foods also influence the production of compounds by gut bacteria, including short-chain fatty acids, which have been linked to communication between the gut, immune system and nervous system.
The new study was not designed to prove that one specific biological pathway caused the observed sleep changes.
Its contribution is showing that the relationship is detectable in ordinary people living their normal lives rather than only under controlled laboratory conditions.
This was not a diet experiment
There is an important limitation.
The researchers did not randomly assign people to high-fibre and low-fibre diets.
This was an observational study using sophisticated causal-inference methods to reduce the influence of other differences between days and participants.
That makes the evidence stronger than a simple cross-sectional survey, but it does not provide the same certainty as a randomised clinical trial.
People may behave differently on days when they eat more plant foods in ways the researchers could not fully measure.
The authors also note that more extreme differences in diet produced larger effects, while the direction of the findings remained broadly consistent.
Further intervention studies will therefore be needed to determine exactly how much changing diet can improve sleep and which people benefit most.
You may not need to wait months to benefit from a better diet
Nutrition is often discussed through long-term outcomes.
Eat differently now to reduce cardiovascular risk years from today. Improve your diet to influence weight over several months. Build healthier habits for the future.
Those benefits remain important.
But this research suggests the body may respond on a much shorter timescale as well.
The vegetables, whole grains, legumes and other high-fibre foods eaten today may be associated with measurable changes while you sleep tonight.
It does not mean a salad is a treatment for insomnia.
It does mean that sleep and diet may be less separate than they appear.
What happens on the dinner plate does not necessarily end when the meal is finished.
Part of the story may continue after you close your eyes.
